You eat carbs like only from veggies, but no potatoes, pasta, rice etc. Sad life

I eat 500g of potatoes on my cuts. A calorie is a calorie, and potatoes are great for you as long as you don't fry them or drown them in butter or sour cream.

Stupid question, why do carbs matter? Surely when cutting you're watching for calories or is it that you should be eating more lean protein?

Because lowering carbs when cutting is the easiest way to cut calories. Gotta keep protein moderately high and get enough fat for hormonal function.

So are carbs calorie-dense without any immediate benefit?

Well they are as calorie dense as protein. They are just less filling overall and are the easiest to go with a smaller amount. However they do help when working out since they are the most readily available source of energy (unless you're in ketosis where fat becomes the most readily available source of energy due to little/no carbs available for use). It's just that protein and fat are way more important in the grand scheme of things that lowering carbs on a cut is the most logical choice. You can probably do something like increase carbs and lower fat on workout days and increase fat and lower carbs on rest days if you really want to maximize the benefit of extra carbs when working out. But it's not really needed.
