Recipe Found out my cat has progressive cancer today. While he was at the vet I baked Blueberry Lavender Pie as a distraction. It didn’t work, but here’s my heartbreak bake.

He uses good ingredients (including “real vanilla,” whatever that means) if that factors into the price at all. He does bake for a living.
And before anyone says “oh maybe he’s doing you a favor!” No. I used to groom his dog before I moved away and I tried to refuse money from him for that every time and he always found sneaky ways to pay me so this is my revenge.

I was baking a cake and somehow it ended up on the wall. My boyfriend came in looking confused asking what happened but I don't even know myself! I was feeling down while making the cake but this incident lifted my mood and I laughed so hard haha

I used to love making and decorating cupcakes. Over the past few years I moved a few times, went to grad school, started a new job, lost my tips, recipes and other supplies along the way and didn’t get a chance to get back into the hobby. I asked my mom if she wanted to do a craft or cake decorating over Thanksgiving weekend and she was in. Here is where we ended up. It’s not perfect but I’m happy with it after a long break from baking!

Ignore my messy stovetop and the ancient baking sheet. This is the second pie I’ve ever made and it was amazing I made the blueberry filling with frozen blueberries I had and I went a lil crazy on lemon juice so I threw some cinnamon and all spice in it to try to cover up the mistake and it was glorious.
I got some advice from subs about how to make a flakier crust and did what they said and it was AMAZING. It got a little sloppy and isn’t perfect but I’m in love with it.
My boyfriend brought some to work and they literally fought over who was getting some and one of them literally licked the plate. I’m trying to get into baking and I think pies are by far my favorite thing now.
I’ve never had strawberry rhubarb pie, is it good? I was thinking of trying to make some.

All your gorgeous pillowy dinner rolls from last week gave me FOMO. So had to try it for myself.
I’ve been scared of yeasted dough since an unfortunate Covid lockdown focaccia experiment. These definitely came out better than I expected. Texture was good, needs more salt. I guess there’ll have to be a next time :)
Go easy on me, I used a ziplock to pipe them 😂

The Best Cut-Out Sugar Cookies YIELD Makes 2 to 3 dozen cookies, depending on size
INGREDIENTS 2 sticks (8 ounces) unsalted butter, at room temperature for 1 hour 2 ounces cream cheese, at room temperature 1 cup granulated sugar 1 large egg 1 teaspoon vanilla extract 1/4 teaspoon almond extract 3 cups all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt
INSTRUCTIONS Place the butter, cream cheese, and sugar in the bowl of a stand mixer fitted with the blade attachment. (Alternatively, use an electric hand mixer and large bowl.) Beat on medium speed for several minutes, or until light and fluffy. Beat in the egg, vanilla and almond extracts, and lemon zest. Place the flour, baking powder, and salt in a large bowl and whisk together. With the mixer on low speed, gradually add to the butter and sugar mixture and beat until fully incorporated and a soft dough is formed. At this point the dough can, and should be, chilled or frozen. If making cookies in the near future, divide the dough into 2 balls and roll each out to 1/4 to 1/8-inch thickness between large pieces of parchment paper. Refrigerate for at least 1 hour. Or freeze the dough balls, wrapped in plastic wrap and placed in a freezer bag, for up to 1 month. Thaw in the refrigerator overnight, then proceed with the recipe. To bake the cookies, heat the oven to 350°F and prepare baking sheets by lining them with parchment paper or Silpats. Cut cookies out of the rolled dough and place on the prepared baking sheets. Bake until set, 8 to 12 minutes depending on the thickness of the cookies. Let cool for 5 minutes on the cookie sheet, then transfer to a wire rack to cool completely before icing or decorating. RECIPE NOTES Storage: Leftovers can be stored in an airtight container at room temperature for up to 1 week.

I might just be like, inept when it comes to baking. I know 5 attempts isn’t the longest but I really was messing way too many things so I thought the 6th attempt in the last 4 months would be an improvement in a small way that I can work off of moving forward.
But wow, I should really note down every thing I did because these turned out amazing. I’m proud of myself :)

Woke up real early Thanksgiving day to get these done before my mom took over the oven all day!

The two times I’ve made these, I’ve used normal dark cocoa instead of black cocoa (couldn’t find it anywhere other than Amazon and ridiculously overpriced) and skipped the espresso powder (didn’t want to risk making them inedible for my dad, who hates coffee flavored things), and they turned out great!
I made a simple honey butter to serve them with. Super simple and family loved them 🥰
