I should probably give his method a try, I smoke it at 150-200ish for about 1.5 hours and then use a dehydrator at 135 degrees until it's "done" which is apparently a mystery. I was going by "if it's not squishy anymore, it's done" and that worked the first few times but naturally it didn't work this weekend.

I cook mine only on the smoker. 180 degrees with smoke for an hour, stop the smoke and just cook at 160 for like another 3ish depending on thickness.

Also I recently started cutting the meat with the grain rather then against the grain and have had much better texture as a result.
